I purchased a rotisserie chicken and shredded it. I add pepper and garlic to it.
In the bowl I dumped the chicken, a can of black beans (drained) and a can of cream of corn. Then I cut up a few green bell peppers.

Next...
I added 18 ounces of Thick and Spicy BBQ Sauce. Mix this all together and place in a sprayed (or greased) 8x8 pan. Add 1/2 cup cheddar cheese and 1/4 cup (or less) Monterey Cheese. Seal tight with foil and bake for 25 minutes at 375.
Then.....take it from the oven and top with
We love onions so I added alot -- but you can add as much of less as you want. Remove the foil and return to the oven for 7 minutes.
Serve it as a meal, or a soft burrito, to with sour cream and tomatoes (or not!) I included Jasmine rice with ours.
